Ever since I saw the recipe for mushroom lasagna on Smitten Kitchen's website, I've been wanting to try it. I'm glad I finally made the lasagna last night! It was delicious!! I was a little worried about the sauce not having cheese in it, but it all turned-out great. If I were to make it again, the only change I would make would be to add 1-2 more vegetables. I don't think I'd want to turn it into a veggie lasagna, but some zucchini or something along those lines would go nicely with the mushrooms and not detract from the flavor.
