I finally made my blackberry pie for my Baked Sunday Mornings group. I have to admit that I didn't finish gathering up ingredients until about midnight on Saturday night so there was no way that I would've had it done for Sunday morning and this afternoon was the first time I had a some free time for a project like this.
For some reason I always dread making pies, but once I get going, I always wonder what I was so worried about. The crust recipe for this pie was great! The instructions were very clear and easy to follow and it produced a dough that was easy to work with ... I didn't lose my temper with it a single time! :) My 8 yr old Penguin helped me get the dough all mixed up and into the fridge. It rolled out perfectly and went right into my dish with no tears or tugging. My Penguin also helped me mix-up the filling. Another relatively painless process.
My 3 yr old Turkey woke up from his nap just in time to help me with the cookie cutter part of the pie. I saw a fellow blogger's pie who had cut-out star shapes for the top of her pie instead of a traditional upper crust. I loved her beautiful pie and wanted to try to do something similar. It was simple and I love how it turned out. I don't normally brush eggs on top of my crust, but it did add a special touch and I love the large, chunky sugar on my stars that the recipe recommended ... they taste good too. :)
After reading the complaints from fellow bloggers about the pie turning out too soupy, I tried doubling the amount of flour in my filling, so I did 2/3 C flour instead of 1/3 C. The pie was juicy as I expected, but definitely not too soupy. I wish the bottom crust was a little more crispy, but it wasn't terribly soggy ... I just prefer a crispier crust. I might try baking the crust a little bit before putting the filling in next time.

ReplyDeleteNice! I like the start. I was just out in the garage digging out fun shapes for Taylor's pie project and I was thinking about stars among other fun shapes. I actually baked my pie that I ended up liking at least 70 minutes...maybe 75. I used clear Pyrex pie pans so I could see when the bottom became browned and that worked better for me this time around. Great job!

ReplyDeleteThere used to be a place online where the recipe could be found but now I can't find it ... seems that the link isn't working. Sadly, I don't recommend buying the cookbook. Poor/vague instructions, I wasn't happy with the outcome of most of the recipes, etc. I'll see if I can find the recipe online or you might try Googling something like "Baked Explorations blackberry pie". All bakers thought the filling was too soupy, so if you find the recipe, make sure to add extra flour.
