Coconut Lemon-Braised Chicken: French Fridays with Dorie

It's that time of the week again ... French Fridays with Dorie.  For anyone new around here, we (the members of an online cooking group) are cooking our way through Dorie Greenspan's new cookbook, Around My French Table.

I have to admit, when I saw this week's recipe, I intended on skipping it.  I'm not into cooking meat and pork didn't sound appealing in the least bit.  I thought I'd rather spend my time & resources trying a different new recipe that might be more interesting for my family & me.  BUT Hubby saw the recipe and got excited about it, so we decided to team-up and give it a whirl.  We made ours with chicken breast instead of pork and I made Hubby do all the cutting and cooking of the meat.



We went to 2 different grocery stores and couldn't find some of the ingredients so we improvised a little bit.  I wished that some of the flavors were a little stronger, but overall everyone really enjoyed this recipe.  We decided to serve ours on top of rice instead of egg noodles and I'm glad we made that choice cause the rice soaked up some of the juices and that was my favorite part!

  1. Quite a few made this with chicken instead of pork. It looks just as tasty with the chicken. My favorite part was the sauce as well. :) Glad your family enjoyed it!

  2. I agree with you on wishing some of the spices coming off a bit stronger, but overall I really enjoyed this dish. It's a French curry, after all! It's always fun when we get a little help with these recipes - plus it heightens the enjoyment of the meal.

  4. I made ours with chicken too, and it was delicious! It's good that you made it work with whatever ingredients were available to you. Since everyone was happy with it, perhaps that was all that mattered.

  5. Looks lovely! I agree the rice was a great partner for this dish. Wish I had thought to use chicken (we aren't huge pork people)
