This week I actually got my recipe done before Friday! On Tuesday, we made pistachio & mozzarella ravioli to go with our simple slow-roasted tomatoes. This was a super-easy recipe ... just tomatoes sprinkled with salt, pepper, olive oil, and other herbs or seasonings of choice ... I chose to just use garlic. My tomatoes roasted in the oven for about 3 hours and they made the house smell great!!

ReplyDeletegreat pictures and you did a good job yourself...yea the whole house was filled with the strong aroma of garlic and rosemary wafting out from the oven...3 hours is a long time but thank God we managed to try this out :)
ReplyDeleteYour tomatoes look great! Yours got much more "sundried" looking than mine. I'll have to up the temp a bit next time. My oven cooks slow, and I usually increase the temp by about 20 degrees. I didn't this time, but maybe I should have.

ReplyDeleteSince a few have asked ... the pistachio & mozzerella ravioli was purchased from Costco ... shhh! :) Look in the section by other pastas, cheeses, etc.
ReplyDeleteP.S. We followed the instructions on the packaging for the ravioli ... after they were cooked, I tossed them with olive oil/butter and a little garlic ... no sauce needed!!
